Ingredients
  

For the Baked Feta Salmon Pasta
  • 8 oz pasta of your choice, penne or fusilli recommended
  • 8 oz feta cheese block
  • 2 fillets salmon fresh or frozen
  • 2 cups cherry tomatoes halved
  • 4 cloves garlic minced
  • 1/4 cup olive oil
  • 1 tsp dried oregano

Method
 

  1. Step 1: Start by preheating your oven to 400°F (200°C).
  2. Step 2: While the oven heats up, cook your pasta according to the package instructions. Drain and set aside.
  3. Step 3: In a baking dish, place the block of feta cheese in the center. Arrange the salmon fillets around it.
  4. Step 4: Add the halved cherry tomatoes and minced garlic to the dish. Drizzle with olive oil and sprinkle with oregano, salt, and pepper.
  5. Step 5: Bake for 20-25 minutes until the salmon is cooked through and the feta has softened.
  6. Step 6: Flake the salmon with a fork and mix with the creamy feta, tomatoes, and garlic to create a sauce.
  7. Step 7: Combine the cooked pasta with the sauce, tossing until every noodle is coated.
  8. Step 8: Serve warm, garnished with fresh basil.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of olive oil.
