Ingredients

For the Soup
  • 1 cup dried lentils green or brown
  • 1 can cannellini beans 15 ounces, rinsed and drained
  • 1 can diced tomatoes 15 ounces, with juices
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 2 cups chopped kale stems removed
  • 2 carrots diced
  • 2 celery stalks diced
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil for sautéing the veggies
  • 1 lemon juice optional

Equipment

  • Large Pot

Method

  1. Step 1: Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are softened.
  2. Step 2: Add the minced garlic and cook for an additional 1 minute, stirring frequently to release its fragrance.
  3. Step 3: Stir in the dried lentils, vegetable broth, diced tomatoes (with juices), thyme, and cumin. Bring the mixture to a boil.
  4. Step 4: Reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes, or until the lentils are tender.
  5. Step 5: Add the cannellini beans and chopped kale to the pot. Continue to simmer for another 10 minutes, until the kale is wilted and tender.
  6. Step 6: Season with salt and pepper to taste. If desired, stir in the lemon juice before serving.
  7. Step 7: Serve hot and enjoy each delicious spoonful!
