Ingredients

For the Carottes Vichy Glacées
  • 1 lb baby carrots peeled
  • 2 tbsp unsalted butter
  • 1 tbsp sugar
  • 1 cup water
To taste
  • Salt
  • Fresh parsley chopped (for garnish)

Equipment

  • Medium Saucepan
  • Wooden Spoon
  • Measuring spoons
  • Cutting Board
  • Peeler
  • Serving Dish

Method

  1. Step 1: In a medium saucepan, combine the baby carrots, butter, sugar, and water.
  2. Step 2: Season with salt to taste.
  3. Step 3: Bring the mixture to a boil over medium-high heat.
  4. Step 4: Reduce the heat to low, cover the saucepan, and simmer for about 15-20 minutes, or until the carrots are tender.
  5. Step 5: Remove the lid and increase the heat to medium-high. Cook for an additional 5-10 minutes, stirring occasionally, until the liquid has evaporated and a glaze forms around the carrots.
  6. Step 6: Transfer the glazed carrots to a serving dish and garnish with chopped fresh parsley before serving.

Notes

For the best flavor, use organic baby carrots if available. Keep an eye on the glaze to prevent burning. Adjust the sugar based on your preference for sweetness.
