Method
- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Step 3: Add the chopped spinach to the skillet and cook until wilted. Remove from heat and let it cool for a few minutes.
- Step 4: In a mixing bowl, combine the cooked spinach, dried cranberries, cream cheese, feta cheese, thyme, and oregano. Mix until well combined.
- Step 5: Make a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
- Step 6: Stuff each chicken breast with the spinach and cranberry mixture. You can secure them with toothpicks if you’d like.
- Step 7: Season the outside of the chicken breasts with salt and pepper.
- Step 8: Place the stuffed chicken breasts in a baking dish and cover with aluminum foil.
- Step 9: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Step 10: Remove from the oven, let rest for a few minutes, then slice and serve.
Notes
Store any leftover stuffed chicken in an airtight container in the refrigerator for up to 3 days. You can also freeze the cooked chicken for up to 3 months.
