Ingredients

For the Fondue
  • 4 pieces endives trimmed and sliced
  • 200 g smoked sausages sliced
  • 200 g cream cheese
  • 100 ml heavy cream
  • 100 g Gruyère cheese grated
  • 50 g Parmesan cheese grated
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • Salt and Pepper
  • Fresh parsley

Equipment

  • Large Skillet
  • Wooden Spoon or Spatula
  • Measuring Cups and Spoons
  • Cheese Grater
  • Serving Dish for Fondue
  • Knife and Cutting Board

Method

  1. Step 1: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the minced garlic and sauté for about 1-2 minutes until it becomes fragrant.
  2. Step 2: Add the sliced endives to the skillet. Cook for about 5-7 minutes, stirring occasionally until they become tender but still maintain a bit of crunch.
  3. Step 3: Stir in the sliced smoked sausages and cook for an additional 3-4 minutes until heated through.
  4. Step 4: Reduce the heat to low. Add the cream cheese and heavy cream to the skillet, stirring continuously until smooth and well combined.
  5. Step 5: Gradually add the grated Gruyère and Parmesan cheeses, stirring until melted and the mixture is creamy. Season with salt and pepper to taste.
  6. Step 6: Transfer the fondue to a serving dish, garnish with freshly chopped parsley, and serve warm with sliced endives for dipping.

Notes

To keep the fondue warm, place it over low heat on the stove or use a fondue pot. Stir occasionally to prevent thickening or separating.
