For the Macro Bowls
  • 1 cup cooked quinoa A complete protein that serves as the base of your bowl.
  • 1 cup roasted sweet potatoes, diced Adds sweetness and is a great source of fiber and vitamins.
  • 1 cup steamed broccoli florets Provides essential nutrients and a crunchy texture.
  • 1 cup chickpeas, rinsed and drained A fantastic source of protein and fiber.
  • 1 avocado sliced Contributes healthy fats and creaminess.
  • 1/4 cup feta cheese, crumbled (optional) Adds a tangy flavor to the bowl.
  • 2 tablespoons tahini A nutty sauce that enriches the dressing.
  • 2 tablespoons olive oil Healthy fat that enhances flavor.
  • 1 tablespoon lemon juice Brightens the dish with acidity.
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Equipment

  • Large Mixing Bowl
  • Small Bowl
  • Whisk
  • Knife and Cutting Board
  • Measuring Cups and Spoons
  • Baking Sheet
  • Steamer basket

Method

  1. Step 1: Rinse quinoa under cold water. Combine with 2 cups of water in a medium saucepan, bring to a boil, reduce to a simmer, cover, and cook for about 15 minutes until water is absorbed. Let sit covered for 5 minutes, then fluff with a fork.
  2. Step 2: Preheat oven to 400°F (200°C). Peel and dice sweet potatoes, toss with olive oil, salt, and pepper, and roast for 20-25 minutes until golden and tender.
  3. Step 3: Bring a pot of water to a boil, place a steamer basket over it, add broccoli florets, cover, and steam for about 5-7 minutes until bright green and tender.
  4. Step 4: Rinse and drain chickpeas. For roasted chickpeas, toss with olive oil, salt, and spices, then roast alongside sweet potatoes for the last 10-15 minutes.
  5. Step 5: In a small bowl, whisk together tahini, olive oil, lemon juice, salt, and pepper. Thin with water if too thick.
  6. Step 6: In a large mixing bowl, combine cooked quinoa, roasted sweet potatoes, steamed broccoli, and chickpeas. Mix to combine.
  7. Step 7: Top with sliced avocado and crumbled feta cheese (if using). Drizzle with tahini dressing and toss gently. Garnish with fresh herbs if desired.

Notes

To make meal prep easier, consider cooking a larger batch of quinoa and roasting extra sweet potatoes and chickpeas. These components can be stored in the refrigerator and used throughout the week for quick meals.
