Ingredients

For the Omelette
  • 4 large eggs
  • 1 medium potato peeled and diced (about 150g)
  • 100 g bacon lardons
  • 1 small onion finely chopped
  • 2 tbsp olive oil
For seasoning
  • Salt
  • Pepper
  • Fresh parsley chopped (for garnish)

Equipment

  • Non-stick skillet or frying pan
  • Spatula
  • Mixing Bowl
  • Whisk or fork
  • Kitchen knife
  • Chopping board

Method

  1. Step 1: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook, stirring occasionally, until they turn golden brown and tender, about 10-12 minutes. Make sure to keep an eye on them to prevent sticking or burning.
  2. Step 2: Once the potatoes are nearly done, add the bacon lardons to the skillet. Cook until crispy, which should take about 5-7 minutes. The fat from the bacon will render and add flavor to the potatoes. After the bacon is crispy, add the chopped onion and sauté until it becomes softened and translucent, about 3-4 minutes.
  3. Step 3: In a mixing bowl, whisk the eggs with a pinch of salt and pepper. This will enhance the flavor of the omelette. Make sure to beat the eggs well until they are frothy.
  4. Step 4: Pour the egg mixture evenly over the potato and bacon mixture in the skillet. Use a spatula to gently stir the mixture, ensuring the eggs spread evenly.
  5. Step 5: Reduce the heat to low and let the omelette cook. As the edges begin to set, carefully lift them with a spatula, allowing the uncooked egg to flow underneath. This process will help create a fluffy texture.
  6. Step 6: Once the omelette is mostly set but still slightly runny on top, cover the skillet with a lid and cook for an additional 2-3 minutes. This will allow the top to cook through without overcooking the bottom.
  7. Step 7: Carefully slide the omelette onto a serving plate. Garnish with freshly chopped parsley for a pop of color and a touch of freshness. Serve immediately while it’s still warm.

Notes

To avoid overcooking the eggs, keep an eye on the heat level throughout the cooking process. Feel free to experiment with additional ingredients like bell peppers, spinach, or cheese for added flavor!
