Ingredients

For the Chicken
  • 4 pieces boneless, skinless chicken breasts the star of our dish, juicy and tender
  • 2 tbsp olive oil adds richness and helps cook the chicken
  • 3 cloves garlic minced
For the Sauce
  • 1 cup heavy cream this is what makes the sauce so luscious
  • 1 cup chicken broth for that deep, savory flavor
  • 1 cup cherry tomatoes halved for color and sweetness
  • 1 cup fresh spinach adding some greens makes it a bit healthier
  • 1 teaspoon Italian seasoning a blend of herbs that transports you to Tuscany
  • 1/2 cup grated Parmesan cheese because who doesn’t love cheese?
  • Fresh basil for garnish (optional) for that beautiful finishing touch

Equipment

  • Large Skillet

Method

  1. Step 1: Start by seasoning the chicken breasts with salt and pepper on both sides.
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until golden brown and cooked through. Once done, remove the chicken from the skillet and set it aside on a plate.
  3. Step 3: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  4. Step 4: Toss in the cherry tomatoes and cook for another 2-3 minutes until they start to soften.
  5. Step 5: Pour in the heavy cream and chicken broth, then stir in the Italian seasoning. Bring this delightful mixture to a simmer.
  6. Step 6: Add the fresh spinach and cook until wilted, which should take about 2 minutes.
  7. Step 7: Stir in the grated Parmesan cheese until it’s melted and smooth.
  8. Step 8: Return the chicken to the skillet and coat it with the creamy sauce. Cook for an additional 2-3 minutes to heat everything through.
  9. Step 9: Garnish with fresh basil, if desired, and serve immediately.

Notes

Make it lighter by swapping heavy cream with half-and-half. Store leftovers in the fridge up to 3 days.
