- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: In a large bowl, combine the chicken thighs, potato wedges, bell peppers, onion, and garlic.
- Step 3: Add the smoked paprika, oregano, salt, black pepper, red pepper flakes (if using), olive oil, and lemon juice to the bowl. Toss everything together until well coated.
- Step 4: Transfer the mixture to a large baking dish or a rimmed baking sheet, spreading it out evenly.
- Step 5: Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the potatoes are tender.
- Step 6: Remove from the oven and let it rest for a few minutes before serving.
- Step 7: Garnish with fresh parsley and serve warm.

This dish is perfect for leftovers! Store any extras in an airtight container in the fridge for up to 3 days. To reheat, simply place it back in the oven at 350°F (175°C) until warmed through.
