  • 4 thighs chicken thighs bone-in and skin-on
  • 4 medium potatoes peeled and cut into wedges
  • 1 red bell pepper red bell pepper sliced
  • 1 yellow bell pepper yellow bell pepper sliced
  • 1 onion onion sliced
  • 3 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes optional
  • 3 tbsp olive oil
  • 1 lemon lemon juiced
  • to taste Fresh parsley chopped, for garnish

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a large bowl, combine the chicken thighs, potato wedges, bell peppers, onion, and garlic.
  3. Step 3: Add the smoked paprika, oregano, salt, black pepper, red pepper flakes (if using), olive oil, and lemon juice to the bowl. Toss everything together until well coated.
  4. Step 4: Transfer the mixture to a large baking dish or a rimmed baking sheet, spreading it out evenly.
  5. Step 5: Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the potatoes are tender.
  6. Step 6: Remove from the oven and let it rest for a few minutes before serving.
  7. Step 7: Garnish with fresh parsley and serve warm.

Notes

This dish is perfect for leftovers! Store any extras in an airtight container in the fridge for up to 3 days. To reheat, simply place it back in the oven at 350°F (175°C) until warmed through.
