Ingredients

For the Peanut Chicken
  • 1 lb chicken breasts boneless and skinless
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 2 tbsp vegetable oil
For the Ginger Slaw
  • 4 cups green cabbage shredded
  • 1 cup carrots shredded
  • 1/4 cup fresh cilantro chopped
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • Salt to taste

Equipment

  • Large mixing bowls
  • Skillet or frying pan
  • Cutting Board
  • Sharp Knife
  • Measuring Cups and Spoons
  • Whisk or fork for mixing
  • Spatula or tongs

Method

  1. Step 1: In a medium bowl, combine the peanut butter, soy sauce, honey, lime juice, minced garlic, and minced ginger. Use a whisk or fork to blend the mixture until it is smooth and well combined.
  2. Step 2: Take the chicken breasts and pat them dry with paper towels. Season both sides generously with salt and pepper.
  3. Step 3: Heat the vegetable oil in a skillet over medium heat. Add the chicken breasts and allow them to cook for about 6-7 minutes on one side, then flip and cook for an additional 6-7 minutes or until cooked through.
  4. Step 4: Remove the chicken from the skillet and brush the peanut sauce over the chicken, allowing it to rest for a few minutes.
  5. Step 5: In a large mixing bowl, combine the shredded cabbage, shredded carrots, and chopped cilantro. In a separate small bowl, whisk together the rice vinegar, sesame oil, grated ginger, and salt. Pour this dressing over the cabbage mixture and toss until well combined.
  6. Step 6: Slice the peanut chicken and serve it alongside a generous portion of ginger slaw, drizzled with any remaining peanut sauce.
