Equipment

  • Oven
  • Baking Sheet
  • Mixing Bowls
  • Whisk
  • Spoon

Method

  1. Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Step 2: In a large bowl, combine the pumpkin puree, brown sugar, granulated sugar, and softened butter. Mix until everything is well combined.
  3. Step 3: Add the egg and vanilla extract to the mixture, stirring until smooth. This is where the magic begins!
  4. Step 4: In a separate bowl, whisk together the rolled oats, flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If you're a chocolate lover like me, fold in the chocolate chips for an extra treat!
  6. Step 6: Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
  7. Step 7: Bake for 12-15 minutes, or until the edges are lightly golden. Your kitchen will smell heavenly!
  8. Step 8: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy your creation!

Notes

These cookies can be stored in an airtight container for up to a week, but they rarely last that long! You can freeze them after they are completely cooled.
