Method
- Step 1: In a mixing bowl, combine the ricotta cheese, flour, egg, salt, black pepper, Parmesan cheese, and chopped basil (if using). Mix until a soft dough forms. It should be sticky but manageable.
- Step 2: Bring the vegetable or chicken broth to a simmer in a large pot. Add the diced tomatoes, minced garlic, dried oregano, salt, and pepper. Let it simmer for about 10 minutes, allowing all those flavors to meld together.
- Step 3: While the broth is simmering, use a spoon or your hands to form small dumplings from the ricotta dough. Don’t stress about their shape; rustic is charming!
- Step 4: Carefully drop the dumplings into the simmering broth. Cook for about 5-7 minutes or until the dumplings float to the surface. This is a sign they are done!
- Step 5: Serve the dumplings in bowls, ladling the tomato broth over them. Garnish with fresh basil leaves for a pop of color and flavor.
Notes
If you have leftovers, store the dumplings and broth separately in airtight containers in the fridge. They should last about 3 days. When you're ready to enjoy them again, just reheat the broth and add the dumplings until warmed through.
