Ingredients

For the Roasted Garlic Mashed Potatoes
  • 2 lb potatoes peeled and cubed, preferably russet
  • 1 head garlic
  • 1/2 cup milk use whole milk or a dairy alternative
  • 1/4 cup unsalted butter
For Garnish
  • to taste Salt essential for bringing out flavors
  • to taste Pepper essential for bringing out flavors
  • for garnish Fresh chives chopped

Equipment

  • Large Pot
  • Aluminum Foil
  • Mixing Bowl

Method

  1. Step 1: Preheat your oven to 400°F (200°C). This will get the garlic perfectly roasted.
  2. Step 2: Cut the top off the head of garlic and drizzle it with a little olive oil. Wrap the garlic tightly in aluminum foil and place it in the oven. Roast for 30-35 minutes, or until it's soft and fragrant.
  3. Step 3: While the garlic is roasting, place the cubed potatoes in a large pot of salted water. Bring it to a boil and cook the potatoes until they're tender, about 15-20 minutes. Once they're tender, drain them well.
  4. Step 4: In a mixing bowl, combine the drained potatoes, the roasted garlic (squeezed out of its skins), milk, and butter. Mash everything together until you get a smooth and creamy consistency.
  5. Step 5: Season your mashed potatoes with salt and pepper to taste. I always recommend tasting as you go!
  6. Step 6: Transfer the mashed potatoes to a serving dish and garnish with chopped chives before serving.

Notes

Leftover mashed potatoes can be stored in an airtight container in the refrigerator for about 3-5 days. To reheat, you can use the microwave or warm them on the stove over low heat. If they seem a bit dry, add a splash of milk to revive their creamy texture.
