Ingredients

For the Crust
  • 1.5 cups all-purpose flour This is the base of your crust, creating that delightful flaky texture.
  • 0.25 cup granulated sugar Just the right amount of sweetness to balance the tart cherries.
  • 0.5 teaspoon salt Enhances all the flavors in your galette.
  • 0.5 cup unsalted butter Chilled and cubed; cold butter is key for a flaky crust.
  • 4-6 tbsp ice water Helps bring the dough together without melting the butter.
For the Filling
  • 2 cups tart cherries Pitted; these juicy gems are the star of the show!
  • 1 tbsp cornstarch Thickens the cherry filling for a perfect texture.
  • 1 tbsp lemon juice Adds brightness to the cherries.
  • 1 tsp almond extract Infuses a lovely nutty flavor.
  • 1 egg beaten (for egg wash) Gives that golden finish to your crust.
For Topping
  • sliced almonds For topping; adds a delightful crunch.
  • additional sugar For sprinkling; a little extra sweetness on top!

Equipment

  • Large Bowl
  • Baking Sheet
  • Parchment Paper
  • Rolling Pin

Method

  1. Step 1: In a large bowl, combine the flour, granulated sugar, and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  2. Step 2: Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Step 3: Preheat the oven to 375°F (190°C).
  4. Step 4: In a separate bowl, mix the tart cherries, cornstarch, lemon juice, and almond extract until well combined.
  5. Step 5: Roll out the chilled dough on a lightly floured surface into a 12-inch circle. Transfer the dough to a baking sheet lined with parchment paper.
  6. Step 6: Spoon the cherry mixture into the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the filling, pleating as necessary.
  7. Step 7: Brush the edges of the dough with the beaten egg and sprinkle with sliced almonds and additional sugar.
  8. Step 8: Bake for 35-40 minutes or until the crust is golden brown and the cherries are bubbling.
  9. Step 9: Allow to cool slightly before serving.
