Method
- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about ½ inch.
- Step 3: Set up a breading station: In one shallow dish, place the flour. In a second shallow dish, whisk the eggs. In a third shallow dish, combine the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
- Step 4: Dredge each chicken breast in flour, shaking off the excess. Dip it into the egg, allowing the excess to drip off, then coat it with the breadcrumb mixture, pressing lightly to adhere.
- Step 5: Place the breaded chicken breasts on a baking sheet lined with parchment paper. Lightly spray or brush them with cooking spray or olive oil.
- Step 6: Bake in the preheated oven for 20-25 minutes, or until the chicken is golden brown and cooked through, reaching an internal temperature of 165°F (75°C).
- Step 7: Remove from the oven and let rest for a few minutes before serving.
Notes
To store leftover schnitzel, place it in an airtight container in the refrigerator. It can last for up to 3 days. Reheat in the oven to retain its crispiness.
