Ingredients
  

For the One Pot Pasta
  • 12 oz pasta any shape you love will work
  • 1 tbsp olive oil for that rich flavor
  • 3 cloves garlic minced
  • 1 medium onion diced
  • 14.5 oz diced tomatoes with juices
  • 4 cups vegetable or chicken broth for a savory base
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 2 cups fresh spinach for a pop of color and nutrition
  • 1 cup grated Parmesan cheese the finishing touch

Method
 

  1. Step 1: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion is translucent.
  2. Step 2: Add the pasta, diced tomatoes (with their juices), broth, oregano, basil, salt, and pepper to the pot. Stir to combine.
  3. Step 3: Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 10-12 minutes, or until the pasta is al dente and most of the liquid has been absorbed.
  4. Step 4: Stir in the fresh spinach and cook for an additional 2-3 minutes, until wilted.
  5. Step 5: Remove from heat and stir in the grated Parmesan cheese until melted and well combined. Serve immediately.

Notes

Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for up to 2 months; just reheat on the stove with a splash of broth.
