- Step 1: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion is translucent.
- Step 2: Add the pasta, diced tomatoes (with their juices), broth, oregano, basil, salt, and pepper to the pot. Stir to combine.
- Step 3: Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 10-12 minutes, or until the pasta is al dente and most of the liquid has been absorbed.
- Step 4: Stir in the fresh spinach and cook for an additional 2-3 minutes, until wilted.
- Step 5: Remove from heat and stir in the grated Parmesan cheese until melted and well combined. Serve immediately.
Notes
Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for up to 2 months; just reheat on the stove with a splash of broth.
