Ingredients

For the Pasta Primavera
  • 8 oz penne pasta a perfect shape for holding onto the sauce and veggies
  • 2 tbsp olive oil for that rich flavor and healthy fats
  • 1 cup cherry tomatoes halved
  • 1 medium bell pepper sliced
  • 1 medium zucchini sliced
  • 1 cup broccoli florets a nutritious crunch
  • 2 cloves garlic minced
  • 1 tsp dried oregano for that aromatic touch
  • salt to taste
  • pepper to taste
  • ¼ cup grated Parmesan cheese optional, for a creamy finish
  • fresh basil for garnish

Equipment

  • Large Skillet
  • Large Pot

Method

  1. Step 1: Cook the penne pasta according to the package instructions. Once it’s al dente, drain and set aside.
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Let it warm up and start to shimmer.
  3. Step 3: Add the halved cherry tomatoes, sliced bell pepper, zucchini, and broccoli florets. Sauté for about 5-7 minutes until the vegetables are tender and vibrant.
  4. Step 4: Stir in the minced garlic and dried oregano. Cook for an additional 1-2 minutes, until the garlic is fragrant.
  5. Step 5: Now, add the cooked pasta to the skillet. Toss everything together until well combined, and season with salt and pepper to taste.
  6. Step 6: Serve warm, topped with grated Parmesan cheese and fresh basil if desired. Enjoy every delicious bite!

Notes

If you have leftovers, store them in the fridge for up to 3 days. Just reheat gently.
